Ooey, gooey, chocolatey, and chewy… these delicious Oatmeal Chocolate Protein Cookie Bars are perfect for chilly days when you’re craving something sweet. The divine combo of hot cacao and soft granola makes these bars perfect for packing for lunch or showing off at the winter holiday cookie exchange–your friends and family will LOVE them.

With a dash of our Chocolate Plant Protein powder, these decadent treats not only satisfy your sweet tooth but also pack a punch of protein. They’re a sweet treat and a nutritional powerhouse all in one!

Don’t feel constrained to follow the exact recipe! Feel free to play and experiment. You can substitute coconut oil instead of butter or granulated monk fruit instead of coconut sugar. Some of the most indulgent masterpieces come from improvising or begin as happy little accidents–shout out to you, Bob Ross!

Yields about 16 bars, depending on how you cut them

Ingredients

  • 2 large eggs, plus one egg yolk
  • 1 cup all-purpose gluten free flour of choice
  • 3 cups gluten free rolled oats
  • 1 (12 oz.) bag of chocolate chips
  • 2 sticks of butter (16 Tbsp)
  • 1 cup coconut sugar
  • ¼ cup Life’s Abundance Chocolate Protein
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • ½ tsp fine sea salt

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit.
  2. Cream the butter and sugar for three minutes, or until it’s creamy and fluffy, using either a hand or stand mixer with a paddle attachment.
  3. Add the eggs and the chocolate protein powder and mix until combined.
  4. Add the salt, vanilla, baking soda, flour, oatmeal, and chocolate chips, and mix until just incorporated.
  5. Spread the batter into a parchment-lined 8x8 pan and bake for 30 to 35 minutes until the top is set and a toothpick comes out clean (no crumbs, just yummy chocolate).
